Tempting jam cake to relish.
Ingredients
- ½ pound - Butter
- 3 cups- Flour
- 1 tablespoon - All-spice
- 2 cups - Sugar
- ½ teaspoon - Salt
- 1 cup- Buttermilk
- 4 - Whole eggs
- 1 teaspoon - Cinnamon
- 1 teaspoon - Soda
- 2 - Egg yolks
- 1 teaspoon - Ground cloves
- 2 cups - Blackberry jam
Method
- Beat butter and sugar together till it becomes fluffy.
- Compound eggs and yolks; puff it off until it becomes light.
- Sift flour with dry ingredients.
- Mix the flour mixture periodically with buttermilk.
- Add jam to the flour mixture.
- Bake it with 3 greased and floured pans of a size of 8 inch
for 35 minutes at 350° F.
Icing:
Ingredients
- 2 - Egg whites
- 12 ounce - Butter
- 2 cups - Sugar
- 1 cup - Evaporated Milk
Method
- Blend butter, sugar and milk to softball stage.
- Drip it slowly over evenly blended egg whites.
- Spread the mixture between the layers of the cake and also on
top of it.
